DUBAI- The Dubai Airshow, commencing on 17 November, will see Emirates Flight Catering (EKFC) take on a monumental role in event catering, with plans to serve over 300,000 meals at Al Maktoum International Airport (DWC).

As the official caterer for the Dubai Airshow 2025, EKFC is orchestrating an extensive logistical operation, involving two large-scale kitchens, a workforce of 2,600, and a globally-inspired menu that showcases the rich diversity of the aviation community represented by nearly 100 countries.

Amidst breathtaking aircraft displays and major commercial agreements, EKFC’s culinary mission stands out for its impressive scale and meticulous execution.

Two fully equipped central kitchens have been constructed to serve over 150 chalets, pavilions, and exhibition stands throughout the Dubai Airshow venue. Each kitchen is outfitted with independent power supplies, cold storage units, and dedicated zones for both hot and cold meal preparations.

So far, more than 35,000 meals have been pre-ordered for various chalets and national pavilions. Initiatives for the catering facilities kicked off in late October, completing construction within a remarkable two-week period, followed by operations tests to ensure top-notch service delivery.

The strategic location of EKFC’s main DWC facility, capable of producing up to 150,000 meals daily, enhances logistical efficiency and airside access during the airshow.

Shahreyar Nawabi, the Chief Executive Officer, emphasized that the airshow offers a perfect opportunity to showcase how airline catering expertise can transform into large-scale event execution.

“Our diverse team brings a wealth of culinary knowledge, allowing us to authentically prepare a wide range of cuisines from French and Emirati to Japanese and Indian. We are merging precision and cultural insight at an unprecedented scale,” he noted.

Authentic Global Cuisine, Tailored for Every Pavilion

EKFC’s culinary team is creating a menu that reflects the international essence of the airshow. Highlights will include dishes like braised beef cheeks in truffle sauce, Emirati tandoori lobster served with saffron rice, Indian pistachio korma, Chinese wok specialties, and a variety of Middle Eastern mezze.

Instead of a fixed menu, pavilions and exhibitors will benefit from customized service tailored to their real-time requirements, showcasing EKFC’s adaptability honed from its airline catering expertise.

Visitors can look forward to seven unique dining concepts, such as Origami (Japanese cuisine), the Yann Couvreur Pastry & Barista Experience, Dibba Oyster Bar, and Bustanica Salad Bar, along with a premium salmon and caviar lounge. Additionally, Emirates Leisure Retail will manage Costa Coffee outlets and a food truck village in the SkyView area.

Workforce and Training Initiatives

To support the operation, EKFC has mobilized 1,800 core staff members and brought on board 74 interns from esteemed institutions such as EHL Lausanne, GLION Switzerland, Les Roches Abu Dhabi, and Dubai College of Tourism.

These interns have undergone six months of comprehensive cross-disciplinary training, enriching their experience across hospitality, finance, and event management.

Additional assistance from Dubai World Trade Centre and Emirates lounges will ensure consistent service delivery throughout the event.

Staff uniforms have been specially designed in cobalt blue for the Dubai Airshow, marking a notable shift from EKFC’s typical red and black attire.

Sustainability and Waste Management

EKFC remains committed to sustainability during the airshow, eliminating single-use plastic bottles and opting for recyclable glass containers. Surplus food will be composted or donated to food banks through partnerships with Dubai Municipality.
